Review: To make a rice pudding like the one our grandmothers prepared, start by placing the milk in a saucepan. Add the cinnamon stick. Remove a strip of lemon peel (being careful not to take the white part as it can make the flavor bitter) and also add it to the casserole. Let everything cook together over medium heat until it starts to boil. Then add the rice to the flavored milk and lower the heat to mild temperature. Let it cook for about 45-50 minutes, stirring occasionally so that it does not stick.
